Ingredients:-



1 cup maida (re fiends flour)
2 tspn sooji (semolina)
2 tbl spoon oil
salt to taster
1 tblsponn ajwain
oil for deep frying


Recipe:-


Mix the maida.sooji,ajwain and salt together.
Now add oil and enought of warm water,kneed into stiff dough.
Shape the dough into a ball and roll the ball into a thick circle.
Cut them into triangle or whatever shape u desire.
Deep fry these triangles on a low flame.
Fry till light brown on both sides .
Drain thoughtly ,cool and store in a airtight container.

Peas Kachori

Peas Kachori (Matar ki kachori)

Ingredients:


For crust:
2-1/4 cups plain flour
3 tbsp. oil
salt to taste
water to knead

For filling:

1 cup fresh peas, shelled
1/2 onion (chopped finely)
5 green chillies
1" piece ginger (grated)
1/2 tsp. garam masala powder
1/4 tsp. coriander seeds (crushed coarsely)
1 tsp. chilli powder
1/4 tsp. turmeric powder
1/4 tsp. amchoor powder
salt to taste
1/4 tsp. each mustard & cumin seeds
3-4 pinches asafoetida
1 tbsp. oil
oil for deep frying

Recipe For crust:

  1. Sieve flour and salt.
  2. Add oil, mix till flour is crumbly.
  3. When a fistful of this flour is held tightly, it should hold the shape.
  4. If required, add a little more oil.
  5. Add water little by little, to knead a soft, pliable, dough.
  6. Knead dough for 6-7 minutes, till texture is smooth and elastic.
  7. Grease hands with a little more oil, rub over smoothened dough.
  8. Cover with a moist cloth, then lid, keep aside for at least 30 minutes.



Peas Kachori

For filling:-


  • Boil peas.
  • Heat oil in a pan add green chili, cumin, coriander seeds and ginger and asafoetida .
  • when cumin seed sputter add chopped onion.
  • fry for a min. Add boiled peas.
  • fry for 2 min. add all the masala.
  • cover and cook for few min.
  • now mash peas with the help of spatula.
  • Allow it to cool.


Making kachories-


  • Divide dough into 10-15 parts, so also the filling.
  • shape dough into a 3" wide round, with fingers and palm.
  • Place 2 tspn of filling in center.
  • Pull over all edges to make a pouch.
  • Take care not to leave behind any part of edge.
  • Flatten this round carefully on palm, with side of other palm.
  • Heat oil in frying pan, till hot.
  • Turn off flame, allow to cool for a minute.
  • Add enough kachoris to fit comfortably.
  • Switch on flame again, on low, when sizzling slows.
  • Do not disturb too often. Flip when one side is golden.
  • Fry other side, drain, keep aside.
  • Repeat for all dough and filling.
  • Fry till both sides are golden brown.
  • serve hot with ur choice of chutney.

It is no wonder that a plate of heartily made ‘Gajar ka Halwa’ is to die for. So try this Recipe as it is also rich in vitamins



Ingredients:-




  • 1 kg juicy orange carrots
  • 2 litre milk
  • 400-500 gm sugar
  • elaichi powder
  • cashews chopped
  • saffron few flakes
  • 1 tbsp ghee



Recipe:-

Peel and grate carrots
Add in a heavy bottom pan.
Add ghee and fry for 10 min.
Put milk,Boil till thick, stirring occassionally.
Once it starts thickening, stir continuously.
Add sugar and cook further till thickens.
Add elaichi powder and nuts.
Stir on low heat till the ghee oozes out.
Serve hot, decorated with a chopped almond or pista.

Recipe for Chilli Tofu


Ingredients:-


350 gms Paneer
1 Egg
1/2 cup Corn Flour
1 tbsp Ginger-Garlic Paste
1 Onions ( cut in square)
1 capcicum (cut in square)
2 tbsp Sliced Green Chillies
1 tbsp Soya Sauce
2 tbsp Vinegar
Oil for frying
Little Water

Recipe:-

  • Cut the tofu into triangle(u can cut in cubes also).
  • Mix together 1 tsp salt, egg, corn flour, garlic, ginger and water to just coat the paneer pieces with the mixture.
  • Heat oil in a pan and fry the paneer pieces caoted with mixture till lighty golden in color.
  • Heat 2 tbsp of the oil in a wok and stir fry the onions in it over high heat for half a minute.
  • add capcicum.fry for 1 more min.
  • Add the green chillies,ginger garlic paste, salt, soya sauce, vinegar and the fried paneer cubes.
  • Mix well, and garnish the chilli paneer with finely cut spring onions and coriander.

Yet another very simple and easy to make recipe.

Corn Pakoda

Ingredients:-



1 cup suji (semolina)
1 cup besan (gram flour)
1 can corn
1 1/2 cup curd
2-3 green chili cut finely
1" ginger grated
salt to taste
oil for fry

Recipe:-


Mix besan and suji with curd .beat well and leave this mixure for 4-5 hr.
Now after 4- 5 hr .when this mixure is ready,mix all the other ingredients except oil together.
Heat oil in heavy frying pan
Drop spoonful of batter into the oil
Deep fry.
Serve hot with ur choice of chutney.

Ingredients:-



6-8 bread
250 grm potato
2 tomato
2 capcicum
salt
grated cheese
coriander leaves
oil for fry

For masala


2 green chili
1/4 fresh coconut
1/2 tspn sugar
salt
1 onion
cumin
mint leaves
coriander leaves

Recipe:-


  • Grind all the ingredients of masala in a blender
  • Boil potato.peal and mast them nad mix salt and green chili.
  • Cur tomato n capsicum in round shape.
  • Fry bread in oil.
  • Apply one layer of ground masla on bread.
  • Now put second layer of round shape tomato and capsicum.
  • Put third layer of mashed potato mixure.
  • Grate cheese on top of this.
  • Bake in the oven for 10 min.
  • Garnish with chopped coriander leaves and min leaves.
  • Serve with any sauce or chutney.
