churma ladoo 







Ingredient:- 




  • 2 cups Whole wheat flour
  • 1 cup Sugar
  • Chopped nuts (almond,cashew,raisins )
  • Ghee for frying
  • 2 tblspn ghee
  • Cardamon powder
  • Water



Recipe:-



  •  Kneed the dough using 2 tbl spn ghee and little water ( dough should not be very soft)
  • Heat ghee in a pan
  • Divide dough 12 equal parts
  • Heat ghee in a pan
  • Fry divided dough on a medium heat
  • Till they become golden brown
  • Take off from frm the heat
  • Grind them in using a grinder.
  • Take off in big bowl
  • Now add sugar and chopped nuts.
  • Churma should be little warm.it will help the sugar to melt a bit enough to bind it into ladoos.
  •   Take a little of the mixture in your hands Press it between your palm ,Give them round shape.


 Note.. If you don't want to make ladoos u can skip that process . And eat churma like that only it's tasty and delicious.

Red Pumpkin curry

 Pumpkin curry







This is great side dish with a right balance of sweet and sour.

 Ingredients:- 

  • 2 cup Red pumpkin( cut into cubes)
  • 1/2 cup onion( thinly sliced)
  • 1 tblspn panch phuran( onion seeds,cumin seeds,fennel seeds,ajwain,fenugreek seeds)
  • 1/2 tspn coriander powder
  • 1/4 tspn turmeric powder
  • 1/4 tspn dry mango powder
  • 1/2 tspn sugar
  • Salt to taste
  • 1 tspn oil

 Recipe:- 

  • Heat oil in a pan
  • Add green chilli and panch phuran
  • When seeds crackle add sliced onion
  • Fry for 2-3 min
  • Now add red pumpkin
  • Add all the salt , turmeric and coriander powder
  • Cook for 5 min
  • When it becomes soft add dry mango powder and sugar.
  • Turn off from the heat
  • Serve with chapati or steamed rice.

Gobhi Manchurian 

Ingredients:


  Cauliflower

 Oil – for frying (It can be olive oil or refined as per your taste)





For the batter:


  • All purpose flour - 3/4 cup
  •  Corn Starch – 3 Tbsp
  •  Salt – 1/4 tsp
  •  Black Pepper – 1/4 tsp
  •  Water – 1/4 cup 
  • Red chilli sauce - 1tblspn









For the sauce:


  •  Oil – 1 Tbsp
  •  Onion – 1/2 medium, chopped finely
  •  Green Chilies – to taste, chopped finely
  •  Garlic – 3 large cloves, chopped finely
  •  Ketchup – 2 Tbsp
  •  Red Chili Sauce – 2 Tbsp or to taste
  •  Soy Sauce – 4 tsp or to taste
  •  White Vinegar – 2 tsp
  •  Water – 4 Tbsp
  •  Corn Starch – 2 tsp 
  • Salt – 1/2 tsp









 Green Onions – 2 stalks, cut diagonally for garnishing







Recipe for sauce


  •   Heat Oil in a medium non-stick pan.
  •   Add Onions, Green Chilies and Garlic and cook until Onions are light brown.
  •   Add Ketchup and Red Chili Sauce and cook until Oil starts to separate from mixture.
  •   Add Soy Sauce and Vinegar and mix well.
  • Add Salt ( According to taste)
  •   Mix 2 tsp Corn Starch with 4 Tbsp Water and add it to the pan. Cook for 1-2 minutes until sauce starts to thicken.
  •   Keep sauce aside.


   To make batter


  Add All-purpose flour, Corn Starch, Salt, Black Pepper and    Water to a small bowl. Mix until there are no lumps.



  •   Coat Cauliflower pieces well with batter and deep fry until Cauliflower is golden in color.
  •   Finish frying all of the Cauliflower and add it to the pan with the sauce. Toss well to coat Cauliflower completely with the sauce.
  •   Add Green Onions and toss again.
  •   Serve immediately.

Ingredient:-


  • 1 chopped onion
  • 1 chopped tomato
  • 1 tblspn ginger and garlic finely chopped
  • 2 green chilli
  • 1 tspn coriander cumin powder
  • 1/4 tspn turmeric powder
  • 1/4 tspn garam masala powder
  • 1 tblspn oil
  • 1 cup black eyed bean ( socked atleast for 4 hr)

Recipe:- 


  • Heat oil in a pressure cooker
  • Add green chilli and cumin
  • Add chopped onion and salt
  • Salt helps onions to cook faster
  • Fry till onions are little brown
  • Add ginger garlic fry for 2 min
  • Now add tomato fry for a min then add all the
  • Dry masala
  • Fry till oil separates
  • Add some water in between if masala starts to get burn
  • When oil separates then add socked black eyed bean
  • Add 2 cups of water
  • Close the lid of the pressure cooker
  • Cook it on medium heat till 4 whistle.
  • Turn of the heat let the steam away.
  • Serve it hot with rice or roti.


This recipe is a  very good source of protein.

Green chilli pickle

Green chilli pickle




Ingredients


Fresh green chilli 2 cup

Mustard seed 1/ 4 cup
Fennel seeds 2 tblspn( dry roast)

Lemon juice 1/ cup
Salt 3-4 tspn

Recipe:-


Wash and dry the green chillies

Slit the green chillies lengthwise

Grind  mustard seeds and fennel seeds together

Mix all the ingredient together

Keep it in a glass or ceramic airtight jar

It will be ready in two weeks.
