Pumpkin curry
This is great side dish with a right balance of sweet and sour.
Ingredients:-
- 2 cup Red pumpkin( cut into cubes)
- 1/2 cup onion( thinly sliced)
- 1 tblspn panch phuran( onion seeds,cumin seeds,fennel seeds,ajwain,fenugreek seeds)
- 1/2 tspn coriander powder
- 1/4 tspn turmeric powder
- 1/4 tspn dry mango powder
- 1/2 tspn sugar
- Salt to taste
- 1 tspn oil
Recipe:-
- Heat oil in a pan
- Add green chilli and panch phuran
- When seeds crackle add sliced onion
- Fry for 2-3 min
- Now add red pumpkin
- Add all the salt , turmeric and coriander powder
- Cook for 5 min
- When it becomes soft add dry mango powder and sugar.
- Turn off from the heat
- Serve with chapati or steamed rice.
