Dum Paneer Kali Mirch






 

Ingredients:-

  • 1 1/2 cup paneer ( cut triangle )
  • 1 onion ( sliced)
  • 1/2 cup curd
  • 1/4 cup fresh cream
  • 2 tspn Ginger garlic green chili paste
  • Whole garam masala(3-4 cardamom ,1 cinnamon stick,2 bay leaves,  4 cloves)
  • 1/4 tspn Cumin powder
  • 1/4 tspn Coriander powder
  • 1/8 tspn Turmeric powder
  • 1 tspn black pepper powder
  • Salt to taste
  • 1 tspn ghee

Recipe:-


Fry the sliced onion and grid them into a fine paste

Heat some ghee in a pan add all the whole garam masala
When crackle add onion paste fry for a min add ginger garlic green chili paste
Fry for 2 min
Now add curd fry for 1 min
Add all the dry masala
Add 1/4 cup of water
Fry till oil separates.
Add salt to taste
Now add 1 cup of water
When water starts to boil add cut paneer pieces .
Add some fresh cream
Cover the pan with aluminum foil ten with the lid

Cook it 15 to 20 min.
Add some fresh coriander leaves.
Serve hot with chapati, parantha , naan or rice.

Lentil and bottle gourd soup

Recipe for Lentil and bottle gourd soup













Ingredients for the lentil soup:-

  • 1/2 cup toor daal ( or any lentil of ur choice)
  • 1 cup bottle goud ( cut into thick pieces)
  • 1 tomato ( cut roughly)
  • 1 tspn ginger ( grated)
  • Salt to taste
  • 1/4 tspn Turmeric powder

For tadka or tempering

  • 1 tblspn ghee
  • 1/4 tspn cumin seeds
  • 2 green chili slit
  • 1/4 tspn asafetida
  • 1/4 tspn red chilli powder

For garnishing:-


Coriander leaves ( chopped)

Recipe:-

  • Wash the lentil properly
  •  Add all the ingredients for the soup together in a pressure Cooker
  • Cooke it on medium slow heat till 4-5 whistle
  • Cool it and take out in a bowl

For tempering:-

  • Heat ghee in small pan
  • Now add cumin seeds, asafetida, green chilli and red chilli powder.
  • Turn off the heat and add it to the soup.
  • Garnish with coriander leaves.
  • Serve hot with ur choice of bread or rice.

  You can add chopped onions and chopped garlic too when tempering.

Sesame seeds and jaggery ladoo


Sesame seeds and jaggery ladoo







Ingredients:-

  • Sesame seeds          :-     1 cup
  • Jaggery.                   :-    1 cup
  • Water.                     :-    1/2 cup

Recipe :-

Dry roast sesame seeds till it becomes light brown
Heat water in a pan
When it comes to boil add jaggery
When jaggery and water mixture come to boil then add sesame seeds.
Mix well for 2- 3 min.
Turn off the heat
Put some water on your palm
Take a small portion of jaggery and sesame seeds mixture
Press it between your palm
Make all the ladoos like that
If mixture becomes cold u need to warm it again.
Or if u don't want to make ladoos then u can take a plate Greece with some oil or ghee
Put the warm mixture in the plate  and flatten it with the spatula.

Paneer tikka





Recipe for Paneer Tikka 





Ingredient:-


  • Paneer 2 cups
  • Bell pepper ( green and red) 2
  • Onion 1
  • Mushroom 2 cups















For marination :-                                                              

  •  2 cup Thick yogurt 
  • 2 tblspn Ginger garlic paste
  • 1 tspn red chilli powder
  • 1 tspn garam masala
  • 2 tblspn graham flour( besan)
  • 1 tspn chaat masala
  • 3 tblspn tandoori masala
  • 1 tspn lemon juice
  • 1 tspn salt





Method:-


  • Cut paneer into 1 inch by 1 inch cubes. Keep aside.           
  • Cut bell peppers and onions in square.
  • Wash mushroom and take out its stem and dry it.









  • To prepare marinade 


  • Add all the ingredients in a bowl. Mix well. Now add all the cut vegetables and Paneer to the marinade. 
  • Gently mix and cover it .


  • Keep it in the refrigerator for couple of hours or overnight .
  • Soak the bamboo skewers in water for 1/2 hr.
  • Preheat oven on 375 degrees.
  • Arrange paneer pieces on skewers alternately with bell peppers, onions and mushrooms.




  • Place the skewers on a grill or wire rack brushed with some oil. 
  • Broil  it on hi  for 15 -20 minutes turning once in between.


  • Cook till paneer pieces get golden brown on all the sides.
  • Serve it  with cilantro chutney and lemon wedges.

Peanut and coriander chutney


Peanut and coriander chutney







Ingredient


Peanut 1/2 cup
Coriander leaves 1/2 cup
Green chilli 2
Salt to taste
Lemon juice 1 tblspn


Recipe


Dry roast the peanut
Cool it and
grind with all the other ingredients.

It can be served as a dip or side dish with Paratha or Dosa or Chila.
